  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • 1 tsp paprika (optional)

Instructions

  1. Wash and chop the broccoli into bite-sized pieces. Mince the garlic and finely dice the onion.
  2. In a medium pot, bring chicken broth to a gentle boil over medium heat. Add the rice, stir, cover with a lid, and simmer for 15-20 minutes until all liquid is absorbed.
  3. In a large skillet, melt the butter over medium heat. Add the onions and garlic; sauté until translucent (about 3-4 minutes).
  4. Toss in the chopped broccoli and sauté for an additional 5 minutes until bright green yet crisp.
  5. Lower the heat and stir in shredded cheddar cheese until it melts smoothly. Gradually add in the cooked rice, mixing thoroughly.
