  • 12 large pasta shells
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (for garnish)
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water in a large pot; cook large pasta shells until al dente (8-10 minutes). Drain and set aside.
  3. Season chicken breasts with salt, pepper, and garlic powder. In a skillet over medium heat, add olive oil and sear chicken for 5-7 minutes per side until golden brown. Let rest before shredding.
  4. In a bowl, mix shredded chicken with half of the alfredo sauce and half of the mozzarella cheese.
  5. Stuff each pasta shell with the chicken mixture.
  6. Spread remaining alfredo sauce in a baking dish; place stuffed shells on top and drizzle with more sauce. Sprinkle with remaining mozzarella cheese.
  7. Cover with foil and bake for 20 minutes; remove foil for the last 10 minutes until cheese is bubbly and golden brown.
