  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 medium fresh sweet potatoes (about 2 lbs)
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh herbs (optional, such as rosemary or thyme)

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Pat chicken breasts dry and season both sides with salt, pepper, garlic powder, and paprika.
  3. Peel and cube sweet potatoes into 1-inch pieces. Toss with olive oil and season with salt and pepper.
  4. Place seasoned chicken in the center of the baking dish and surround it with cubed sweet potatoes. Optionally, add fresh herbs.
  5. Roast in the oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are tender.
