  • 4 boneless, skinless chicken breasts
  • 1 lb fresh asparagus, trimmed
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides and place them in the baking dish.
  3. In a bowl, whisk together olive oil, soy sauce, lemon juice, and minced garlic. Pour half over the chicken.
  4. Arrange asparagus around the chicken and drizzle remaining sauce over everything.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown. Let rest for 5 minutes before serving.
