  • 2 cups basmati rice
  • 2 medium onions, sliced thinly
  • 4 cloves garlic
  • 1 tbsp ginger paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 cup plain yogurt
  • ¼ cup cooking oil or ghee
  • ½ cup cilantro, chopped
  • ½ cup mint leaves, chopped
  • Salt to taste
  • A pinch of saffron soaked in warm water (optional)

Instructions

  1. Marinate chicken: In a bowl, mix yogurt, garlic paste, ginger paste, cumin seeds, coriander powder, garam masala, and salt. Add chicken and marinate for at least 30 minutes.
  2. Sauté onions: Heat oil or ghee in a large pot over medium heat. Add sliced onions and cook until golden brown.
  3. Cook chicken: Add marinated chicken to the pot and cook for about 10–15 minutes until browned.
  4. Add rice and broth: Layer rinsed basmati rice over the chicken without stirring. Pour enough water or broth to cover by an inch.
  5. Simmer: Cover tightly and reduce heat to low. Cook for 20–25 minutes until rice is fluffy.
  6. Finish: Let sit covered for another 10 minutes. Fluff gently and add fresh herbs before serving.
