  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 medium sweet onion, sliced
  • 4 large flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup sour cream
  • ½ cup salsa

Instructions

  1. In a skillet over medium heat, add 2 tsp olive oil and cook the seasoned chicken breasts for 5-7 minutes on each side until golden brown and fully cooked. Remove from heat and shred.
  2. In the same skillet, add sliced onion and bell peppers. Sauté for about 5 minutes until softened.
  3. In a large bowl, mix shredded chicken with sautéed vegetables and stir in salsa.
  4. Lay out tortillas, add about ¼ of the chicken mixture to each, along with cheese and sour cream. Roll up tightly.
  5. Place burritos seam-side down in an oiled baking dish and bake at 350°F (175°C) for 15-20 minutes until heated through.
