  • 3 cloves fresh garlic, minced
  • 28 oz canned diced tomatoes
  • 1 cup bell peppers (mixed colors), chopped
  • 1 medium onion, chopped
  • 1 cup dry red wine
  • 2 tsp Italian herbs (oregano & basil)
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Chop the onion and bell peppers, and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add boneless chicken thighs and cook until golden brown on both sides (about 4-5 minutes per side).
  3. Toss in the onions and bell peppers; sauté until softened (3-4 minutes).
  4. Pour in canned tomatoes and red wine, scraping up flavorful bits from the pan.
  5. Add salt, pepper, oregano, and basil; stir well and let simmer for 25-30 minutes.
