Ingredients

Scale
  • 1 lb boneless, skinless chicken steaks (about 1/2 inch thick)
  • 1 cup all-purpose flour, divided
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 cup canola oil for frying
  • Optional gravy: 2 tbsp butter, 2 tbsp flour, 1 cup milk

Instructions

  1. Marinate the chicken in buttermilk seasoned with salt and pepper for at least 1 hour.
  2. Set up three shallow dishes: one with seasoned flour, one with beaten eggs, and another with plain flour.
  3. Dredge each chicken steak first in flour, then in egg wash, and back into the flour for double coating.
  4. Heat oil in a skillet over medium-high heat until shimmering. Fry each side for about 3-4 minutes until golden brown.
  5. For optional gravy: In the same pan, melt butter, whisk in leftover flour from dredging, then gradually stir in milk until desired consistency is reached.
