  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 9 no-boil lasagna noodles
  • 2 cups marinara sauce
  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh oregano, chopped
  • 1 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and diced chicken. Season with salt and pepper. Cook until golden brown and cooked through.
  3. Add minced garlic, basil, and oregano to the skillet; sauté for about one minute until fragrant.
  4. In a bowl, combine ricotta cheese with half of the mozzarella and all of the Parmesan; mix until smooth.
  5. In a baking dish, spread some marinara sauce on the bottom. Layer with noodles, cheese mixture, chicken, and more marinara sauce; repeat layers until all ingredients are used.
  6. Cover with foil and bake for 25 minutes. Remove foil, sprinkle remaining mozzarella on top, and bake uncovered for an additional 15 minutes until bubbly and golden.
