  • 2 lemons (juiced)
  • 3 tbsp capers
  • 1 cup low-sodium chicken broth
  • 8 oz linguine or spaghetti
  • ¼ cup fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: mince garlic and chop parsley. Juice the lemons.
  2. Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then sear until golden brown (5-7 minutes per side). Remove from skillet.
  4. In the same skillet, sauté garlic until fragrant (30 seconds). Add lemon juice, chicken broth, and capers; simmer for 5 minutes.
  5. Return the chicken to the skillet along with drained pasta; toss to combine everything well.
