  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup plain yogurt
  • 4 cloves fresh garlic, minced
  • 1 inch fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk or heavy cream
  • 2 tbsp cooking oil (vegetable or ghee)
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix yogurt, garlic, ginger, cumin, coriander, turmeric, salt, and pepper. Add chicken pieces and coat thoroughly. Marinate in the fridge for at least one hour or overnight.
  2. Heat oil in a large skillet over medium-high heat. Sear marinated chicken pieces until golden brown on all sides (5-7 minutes per batch).
  3. In the same skillet, sauté chopped onions until translucent (5-6 minutes). Stir in diced tomatoes and simmer until thickened (about 10 minutes).
  4. Reduce heat and gradually add coconut milk or cream while stirring. Simmer until slightly thickened (5-10 minutes).
  5. Return the chicken to the skillet with its juices and simmer for another 10 minutes until cooked through.
  6. Garnish with fresh cilantro before serving over basmati rice or with naan bread.
