  • 2 cans (15 oz each) canned chili beans
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 cup shredded cheddar cheese
  • 1 cup sweet cornmeal mix
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1/2 cup sour cream
  • chopped green onions (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease an oven-safe baking dish.
  2. In a skillet, brown the ground meat over medium heat until no longer pink; drain excess fat.
  3. Stir in chili beans and diced tomatoes; season with chili powder, salt, and pepper. Simmer for 5 minutes.
  4. In a bowl, mix cornmeal mix, buttermilk, eggs, and sour cream until smooth.
  5. Layer the meat mixture in the baking dish, sprinkle with cheese, then pour the cornbread batter on top.
  6. Bake for 25-30 minutes until golden brown on top.
