  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, combine granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Chill the dough in the refrigerator for 30 minutes.
  5. Scoop tablespoon-sized portions of dough, roll them into balls, and coat each in powdered sugar.
  6. Place cookie balls on prepared sheets about 2 inches apart and bake for 10-12 minutes until edges are set but centers remain soft.
  7. Allow to cool slightly before transferring to wire racks.
