  • 1 tbsp ground cinnamon
  • 2 tbsp sugar
  • 1 cup milk (whole or almond)
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together flour, baking powder, sugar, and cinnamon until well combined.
  2. In another bowl, mix milk, melted butter, eggs, and vanilla extract until smooth.
  3. Gradually add the wet ingredients to the dry mixture, stirring gently until just combined (lumps are okay).
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter for each pancake; cook until bubbles form on top (2-3 minutes), then flip and cook for another minute until golden brown.
  6. Serve stacked high with maple syrup or fresh fruit.
