  • 1 cup brown sugar (packed)
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp milk (whole or nut milk)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and brown sugar until fluffy. Add eggs one at a time and mix well, then stir in vanilla.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add the dry mixture to the wet ingredients until just combined.
  4. Roll half the dough into a rectangle (¼ inch thick), spread melted butter on top, then sprinkle with cinnamon and sugar.
  5. Roll tightly into a log and slice into rounds about 1 inch thick.
  6. Bake for 10-12 minutes until edges are golden but centers remain soft; cool slightly before icing.
  7. Mix powdered sugar with milk to achieve desired icing consistency and drizzle over warm cookies.
