  • 2 cups fresh corn kernels (about 4 ears)
  • 2 medium Yukon gold potatoes, diced
  • 6 slices thick-cut bacon, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels, leaving some drippings in the pot.
  2. Sauté the onion in the same pot until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in the diced potatoes and corn; cook for another 3-4 minutes.
  4. Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer covered for 15-20 minutes or until potatoes are fork-tender.
  5. Slowly stir in heavy cream and season with salt, pepper, and thyme. Simmer for another 5 minutes.
  6. Serve hot, garnished with crispy bacon bits or fresh herbs alongside crusty bread.
