  • 2 bay leaves
  • 3 dried guajillo chiles (soaked)
  • 1 cup fresh cilantro (for garnish)
  • 1/4 cup lime juice
  • 4 cups low-sodium beef broth
  • 1 onion (finely chopped)
  • 4 garlic cloves (minced)
  • 2 tsp cumin powder
  • 1 tsp dried oregano

Instructions

  1. Prepare the chiles by removing stems and seeds; soak them in hot water for 15 minutes.
  2. In a skillet, sauté chopped onions until translucent. Add minced garlic and cook until aromatic.
  3. In a blender, combine soaked chiles, sautéed onions, garlic, cumin powder, oregano, lime juice, and beef broth; blend until smooth.
  4. Place the chuck roast in the crockpot, pour over the blended sauce, and add bay leaves.
  5. Cook on low for 8 hours or high for 4 hours until the meat is tender.
  6. Shred the meat with two forks in the crockpot. Serve on warm corn tortillas garnished with fresh cilantro and diced onions.
