  • 1 lb shrimp (peeled and deveined)
  • 8 oz Andouille sausage (sliced)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 14.5 oz canned diced tomatoes
  • 3 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 1 cup long-grain rice
  • Green onions & parsley (for garnish)

Instructions

  1. Prepare your ingredients by chopping bell peppers, onion, and mincing garlic.
  2. In a skillet over medium heat, add olive oil and sear boneless chicken thighs for about 3-4 minutes on each side until golden brown.
  3. Transfer the seared chicken to the crockpot along with the sliced sausage, diced tomatoes, bell peppers, onion, garlic, rice, chicken broth, and Cajun seasoning. Stir gently to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, stir in the shrimp until cooked through.
  6. Fluff the rice with a fork, garnish with chopped green onions and parsley, then serve hot.
