  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 cup bell peppers (any color), diced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the canned beans thoroughly under cold water.
  2. Dice the cherry tomatoes, red onion, and bell peppers into bite-sized pieces.
  3. Chop the cilantro (or parsley) finely and add to the bowl with the veggies.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper until well blended.
  5. In a large mixing bowl, combine the beans with the chopped vegetables and drizzle with the dressing. Mix gently to coat evenly.
  6. For best flavor, chill in the refrigerator for at least 30 minutes before serving.
