  • 2 green onions, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, heat a splash of oil and sauté the chopped onion and green bell pepper for about 5 minutes until soft.
  2. Push the veggies to one side and add the ground beef. Cook until browned, breaking it apart as needed (about 7 minutes).
  3. Stir in minced garlic and Cajun seasoning; cook for an additional minute until fragrant.
  4. Add rinsed rice and chicken broth to the skillet. Bring to a gentle boil before reducing heat to low.
  5. Cover and simmer for about 20 minutes or until liquid is absorbed, stirring occasionally.
  6. Fluff the rice with a fork and garnish with chopped green onions before serving.
