1 lb lean ground beef
1 (15 oz) can black beans, drained and rinsed
1 (16 oz) bag Doritos (Nacho Cheese or Cool Ranch)
2 cups shredded cheddar cheese
1 cup salsa
1 cup sour cream
2 green onions, chopped
Instructions
Preheat oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef with salt and pepper until no longer pink. Drain excess grease.
Stir in black beans and salsa; heat through.
In a greased 9×13 inch baking dish, layer half of the Doritos. Add half of the beef mixture followed by half of the cheddar cheese. Repeat layers.
Bake for about 20 minutes or until bubbly and golden brown. For extra crunch, broil on high for an additional 2-3 minutes.
Allow to rest for 5 minutes before serving. Garnish with sour cream and green onions.
