  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup warm water
  • 1/2 tsp salt
  • 1 cup ground beef or chicken (lean)
  • 1/2 cup onions, finely chopped
  • 1/2 cup bell peppers, chopped
  • 1 tsp cumin
  • 1 tsp paprika

Instructions

  1. In a large bowl, mix the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add warm water, mixing until a smooth dough forms. Knead gently, then chill for at least 30 minutes.
  3. For the filling, sauté onions over medium heat until translucent. Add ground meat and cook thoroughly while breaking it apart.
  4. Stir in bell peppers and spices; cook until fragrant. Allow to cool slightly.
  5. Roll out chilled dough on a floured surface and cut into circles using a round cutter.
  6. Place about one tablespoon of filling in each circle, fold over, and crimp edges securely.
  7. Preheat oven to 400°F (200°C). Arrange empanadas on a parchment-lined baking sheet and brush with an egg wash.
  8. Bake for 20-25 minutes or until golden brown.
