  • 2 cups cooked chicken, shredded
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup sour cream
  • 1 cup shredded cheese (Monterey Jack and cheddar mix)
  • 1/2 cup chopped onions
  • 1/4 cup fresh cilantro, chopped
  • 1 cup tomato sauce
  • 2 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine tomato sauce, chili powder, garlic powder, cumin, and lime juice over medium heat until bubbling.
  3. Assemble enchiladas by filling each tortilla with shredded chicken and chopped onions. Roll tightly and place seam-side down in a baking dish coated with some enchilada sauce.
