Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • 1 ½ cups warm water (100°F to 110°F)
  • 2 tsp active dry yeast
  • ¼ cup extra virgin olive oil (plus more for drizzling)
  • 2 tsp sea salt
  • 2 tbsp fresh rosemary or thyme (chopped)
  • Coarse sea salt (for topping)

Instructions

  1. Activate the yeast: Combine warm water and yeast in a bowl. Let it sit for 5-10 minutes until frothy.
  2. Mix the dough: In a large bowl, mix flour and salt. Add the yeast mixture and olive oil; stir until combined.
  3. Knead the dough: On a floured surface, knead for 8-10 minutes until smooth.
  4. First rise: Place in an oiled bowl, cover with plastic wrap, and let it rise in a warm spot for about an hour or until doubled.
  5. Shape the focaccia: Gently punch down the dough and spread it onto a greased baking sheet, creating dimples with your fingers.
  6. Add toppings & final rise: Drizzle olive oil over the top and sprinkle with herbs and coarse sea salt. Cover and let rise for another 30 minutes while preheating the oven to 425°F.
  7. Bake: Bake for 20-25 minutes until golden brown. Allow cooling slightly before slicing.
