  • 4 cups low-sodium vegetable broth

  • Salt and pepper to taste

Instructions

  1. Rinse the dried pinto beans under cold water and soak them overnight in plenty of water.
  2. In a large pot over medium heat, add olive oil and sauté the chopped onion until golden brown (about 5 minutes).
  3. Stir in the minced garlic, cumin, and chili powder; cook until fragrant (about 1 minute).
  4. Drain the soaked beans and add them to the pot along with vegetable broth. Stir to combine.
  5. Bring to a boil, then reduce heat and let simmer uncovered for 1 to 1.5 hours or until beans are tender.
  6. Season with salt and pepper to taste; mash some beans for creaminess if desired.
