  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 6 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 4 tbsp extra virgin olive oil
  • 2 lbs Yukon gold potatoes, chopped into even chunks
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix minced garlic, olive oil, salt, pepper, and dried herbs. Coat the chicken breasts in this mixture.
  3. Toss the chopped potatoes with olive oil, salt, pepper, and additional herbs; spread on a baking sheet.
  4. Place marinated chicken on top of the seasoned potatoes in a baking dish.
  5. Bake for 25-30 minutes until everything is golden brown and cooked through.
  6. Five minutes before removing from the oven, sprinkle Parmesan cheese over the chicken and potatoes to melt.
