Ingredients

Scale
  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley (optional for garnish)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Place chicken thighs in a resealable bag or dish; pour marinade over them and coat well. Refrigerate for at least 30 minutes or overnight for best results.
  3. Preheat oven to 400°F (200°C) or grill to medium-high heat.
  4. Place marinated chicken thighs skin-side up on a baking sheet (or directly on the grill). Bake for 35-40 minutes or until the internal temperature reaches 165°F (75°C) and skin is crispy.
  5. Let rest for 5-10 minutes before serving. Garnish with fresh parsley.
