  • 8 oz spaghetti
  • 1 cup fresh cilantro leaves
  • 2 mild jalapeños, chopped
  • 3 cloves garlic, minced
  • 4 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • ½ cup grated Parmesan cheese (plus more for serving)
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by washing and finely chopping the cilantro and jalapeños.
  2. Cook the spaghetti in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and reserve some pasta water.
  3. In a blender, combine cilantro, jalapeños, garlic, olive oil, lime juice, and half of the Parmesan cheese. Blend until smooth but slightly chunky.
  4. In a skillet over low heat, mix cooked spaghetti with the green sauce. Gradually add reserved pasta water until you reach your desired consistency.
  5. Stir in remaining Parmesan cheese and season with salt and pepper to taste. Serve warm.
