  • 1 lb lean ground beef
  • 3 cups egg noodles
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, finely chopped
  • 1 bell pepper, diced (any color)
  • 1 tsp garlic powder
  • 1 can (14.5 oz) diced tomatoes, drained
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook egg noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, sauté onion and bell pepper in 1 tbsp of olive oil until soft, about 5 minutes.
  4. Add ground beef to the skillet; cook until browned, about 6-8 minutes. Drain excess fat.
  5. Stir in diced tomatoes and garlic powder; season with salt and pepper. Simmer for 5 minutes.
  6. In a large bowl, combine cooked noodles with the meat mixture and half of the shredded cheese.
  7. Transfer to a greased baking dish and top with remaining cheese. Bake for 20-25 minutes until bubbly and golden brown.
