Ingredients

  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 red bell pepper, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley or basil, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. Combine with 2 cups of water in a pot, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until water is absorbed.
  2. While quinoa cooks, chop cherry tomatoes, cucumber, red bell pepper, and fresh herbs.
  3. Fluff the cooked quinoa in a large bowl and add chopped veggies and crumbled feta on top.
  4. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  5. Pour dressing over the salad mixture and toss gently to combine.
