  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 ½ cups granulated sugar
  • ½ cup vegetable oil (canola recommended)
  • 3 large eggs
  • 1 cup mashed ripe bananas (about 2 medium bananas)
  • 1 cup crushed canned pineapple (drained)
  • 1 cup chopped pecans or walnuts (optional)
  • 8 oz cream cheese (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, and sugar.
  3. Add the vegetable oil and eggs one at a time while mixing gently. Stir in the mashed bananas and crushed pineapple until combined.
  4. Fold in the chopped nuts if using.
  5. Divide the batter between the pans and bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
  6. Let cakes cool in pans before transferring to wire racks. While cooling, prepare the frosting by beating cream cheese with powdered sugar and vanilla until smooth.
  7. Frost between layers and on top of the cooled cake.
