  • 9 lasagna noodles
  • 2 cups cottage cheese (low-fat or whole milk)
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)
  • 1 pound ground beef or sausage (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Cook lasagna noodles according to package instructions until al dente. Drain and lay flat.
  2. In a bowl, combine cottage cheese, 1 cup mozzarella, Parmesan, and any cooked meat or spinach if using.
  3. Spread a thin layer of marinara sauce in a baking dish. Layer three noodles, half of the cottage cheese mixture, and more marinara sauce. Repeat layers until all ingredients are used, finishing with a layer of marinara and remaining mozzarella on top.
  4. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden brown. Allow to cool slightly before serving.
