  • 1 cup granulated sugar
  • 2 cups fresh blueberries (divided)
  • 1/4 cup freshly squeezed lemon juice
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. Bake crust for 10 minutes until golden brown; let cool.
  4. Beat cream cheese until smooth in a large bowl; gradually add sugar until fluffy.
  5. Incorporate eggs one at a time, then mix in lemon juice and sour cream. Gently fold in half the blueberries.
  6. Pour filling over cooled crust and bake at 325°F (160°C) for 50-60 minutes until slightly jiggly.
  7. Allow cooling to room temperature, then refrigerate for at least four hours or overnight.
  8. Top with remaining blueberries before serving.
