  • 2 tbsp cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, 1/4 cup sugar, and salt. Cut in the chilled butter until crumbly.
  2. Roll out the dough on a floured surface into a circle about 12 inches wide; place it in a 9-inch pie dish and trim excess edges.
  3. Poke holes in the crust with a fork to prevent bubbling; bake for about 15 minutes until lightly golden.
  4. In a saucepan over medium heat, combine remaining sugar, cornstarch, and water until bubbly. Stir in lemon juice and egg yolks; cook until thickened.
  5. Beat egg whites until soft peaks form; gradually add the remaining sugar until stiff peaks appear. Spread over warm lemon filling.
  6. Bake for another 10–15 minutes until meringue is golden brown. Cool completely before serving.
