  • 2 lbs Yukon Gold Potatoes
  • 2 medium Fresh Lemons (juiced and zested)
  • 34 tbsp Olive Oil
  • 45 cloves Garlic (minced)
  • 2 tbsp Fresh Herbs (Thyme or Rosemary)
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the Yukon Gold potatoes, then cut them into uniform wedges.
  3. In a large bowl, combine potato wedges with lemon juice, lemon zest, and olive oil; toss until coated.
  4. Add minced garlic, salt, pepper, and fresh herbs; mix well.
  5. Spread the mixture on a baking sheet in a single layer; roast for 35-40 minutes, flipping halfway through until golden brown.
