  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 cup plain or Italian seasoned breadcrumbs
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 1/2 cup ketchup (divided)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh or dried parsley (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine ground beef, breadcrumbs, eggs, onion, half of the ketchup, garlic powder, salt, and pepper. Mix until well combined.
  3. Transfer the mixture to a greased baking dish or muffin tin, pressing gently to shape.
  4. Top each loaf with remaining ketchup.
  5. Bake for 30–35 minutes or until internal temperature reaches 160°F (70°C).
  6. Allow to rest for 10 minutes before serving.
