  • 8 oz rice noodles
  • 1 lb chicken breast, boneless and skinless (or shrimp/tofu)
  • 2 large eggs
  • 1 cup bean sprouts
  • 4 green onions, sliced
  • ½ cup peanuts, crushed
  • 3 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp fresh lime juice

Instructions

  1. Soak the rice noodles in hot water until tender yet firm; drain and set aside.
  2. Whisk together tamarind paste, soy sauce, brown sugar, and lime juice in a bowl until smooth.
  3. Heat oil in a large skillet over medium-high heat. Sauté chicken until golden brown (5-7 minutes).
  4. Push chicken aside; pour beaten eggs into the pan and scramble gently until just set.
  5. Add drained noodles and sauce to the skillet; toss to coat thoroughly.
  6. Stir in bean sprouts and half of the green onions; cook briefly until heated through.
  7. Serve hot topped with crushed peanuts and remaining green onions.
