  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (adjust to taste)
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • 3 large eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a greased 9-inch springform pan.
  2. Toss sliced peaches with sugar and cinnamon; set aside.
  3. Beat softened cream cheese until smooth. Add sour cream, eggs, and vanilla; mix until creamy.
  4. Pour half the cheesecake mixture over the crust, layer half the peaches on top. Add remaining cheesecake mixture and top with more peaches.
  5. Bake for 50-60 minutes until golden; cool completely in the oven before chilling for at least four hours.
