Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Gradually add iced water to form a dough.
  3. Wrap the dough in plastic wrap and chill for 30 minutes.
  4. Toss sliced peaches with sugar and cinnamon in another bowl.
  5. Roll out chilled dough into a rough circle (12 inches). Transfer to the baking sheet.
  6. Place peach mixture in the center, leaving a 2-inch border; fold edges over filling.
  7. Bake for 30-35 minutes until golden brown and bubbling.
