  • 3 lbs beef chuck roast
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, cut into chunks
  • 2 medium yellow onions, diced
  • 2 cups beef broth
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp soy sauce (low sodium)
  • Salt and black pepper to taste

Instructions

  1. Chop onions and carrots; peel and chop potatoes.
  2. Heat oil in a skillet over medium-high heat. Brown the beef on all sides to lock in flavor.
  3. Place the seared roast in the crock pot with veggies, garlic, herbs, soy sauce, salt, and pepper.
  4. Pour beef broth over the ingredients until just covered.
  5. Cover and set the crock pot to low for 8-10 hours or high for 4-5 hours until tender.
  6. Remove roast, let it rest briefly, slice against the grain, and serve with gravy.
