  • 1 cup pumpkin puree (canned or homemade)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • For the frosting: 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and a pinch of salt until smooth.
  3. Add pumpkin puree, melted butter, and eggs to the dry ingredients. Mix gently until just combined; lumps are okay.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  5. Allow the bars to cool completely before preparing the cream cheese frosting.
  6. In a separate bowl, beat softened cream cheese and melted butter until smooth. Gradually add powdered sugar and vanilla extract until creamy.
  7. Spread the frosting over cooled pumpkin bars, cut into squares, and serve.
