  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1/2 cup unsalted butter (softened)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until light and fluffy. Mix in pumpkin puree and vanilla extract.
  4. Gradually add dry ingredients to wet ingredients while mixing on low speed until just combined. Fold in nuts if using.
  5. Drop spoonfuls of dough onto prepared baking sheets. Bake for 12-15 minutes until edges are golden but centers remain soft.
  6. Allow to cool on wire racks.
