Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat softened butter until creamy; gradually add granulated and brown sugars.
  4. Mix in eggs one at a time along with vanilla extract until fluffy.
  5. Gently fold in pumpkin puree until combined smoothly.
  6. Gradually add dry ingredients to wet mixture on low speed until just combined.
  7. Spoon batter into liners, filling each halfway. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool completely before frosting with cream cheese frosting.
