Scale
  • 2 cups fresh raspberries
  • 3/4 cup granulated sugar
  • 1 prepared pie crust (9-inch)
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. Preheat the oven to 425°F (220°C). Let store-bought crust sit at room temperature for 10 minutes.
  2. Fit the pie crust into a 9-inch pie pan, trimming excess dough as needed.
  3. In a bowl, mix raspberries with sugar, flour, lemon juice, and cornstarch until well-combined. Let sit for 15 minutes.
  4. Spoon the raspberry mixture into the prepared crust. Optionally top with another layer or a lattice crust and cut slits for steam.
  5. Place on a baking sheet and bake for 15 minutes at 425°F (220°C). Reduce heat to 350°F (175°C) and bake for an additional 25-30 minutes until bubbly and golden brown.
  6. Allow to cool completely before slicing. Serve warm or chilled with whipped cream or vanilla ice cream.
