  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until soft and golden brown, about 5 minutes. Stir in minced garlic until fragrant.
  2. Add rice to the skillet, stirring well to coat it with oil. Toast lightly for about 2 minutes.
  3. Gradually add vegetable broth, bringing the mixture to a gentle boil. Stir in diced carrots, cumin, and bay leaf.
  4. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until liquid is absorbed. Avoid lifting the lid during cooking.
  5. Once cooked, remove from heat and let sit covered for another 5 minutes. Fluff with a fork and mix in fresh parsley before serving.
