  • 2 pounds Roma tomatoes, halved
  • 1 head fresh garlic, cloves separated
  • ¼ cup extra virgin olive oil
  • 1 cup fresh basil leaves
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the Roma tomatoes and slice them in half lengthwise; place cut-side up on the baking sheet.
  3. Add whole garlic cloves to the baking sheet, drizzle with olive oil, and season with salt and pepper.
  4. Roast in the oven for 30-35 minutes until tomatoes are soft and caramelized.
  5. Transfer roasted ingredients to a blender or food processor; add fresh basil and balsamic vinegar. Blend until smooth.
