  • 2 tbsp olive oil
  • 2 tsp salt
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 lemon (juiced)
  • 2 sprigs fresh rosemary or thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Remove giblets from the chicken, rinse under cold water, and pat dry.
  3. Rub olive oil all over the chicken and season generously with salt, paprika, garlic powder, and black pepper—don't forget inside the cavity.
  4. Squeeze lemon juice into the cavity and add fresh herbs for extra flavor.
  5. Place the chicken breast-side up in a roasting pan and roast for about 1 hour and 20 minutes until the internal temperature reaches 165°F (75°C).
  6. Let rest for 10-15 minutes before carving. Serve with your favorite sides.
