  • 2 salmon fillets (6 oz each)
  • 1 cup long-grain white rice
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • 2 tbsp fresh dill or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the rice under cold water until the water runs clear. In a pot, combine rinsed rice with 2 cups of water; bring to a boil, then cover and simmer on low for about 15 minutes until fluffy.
  3. On a baking sheet, place the salmon fillets. Drizzle with olive oil and lemon juice, then sprinkle minced garlic evenly over each fillet. Season with salt and pepper.
  4. Bake the salmon for 12-15 minutes until it flakes easily with a fork.
