  • 2 pounds Russet potatoes, thinly sliced
  • 1 ½ cups heavy cream
  • 1 ½ cups sharp cheddar cheese, shredded
  • 2 cloves garlic, minced
  • 4 tablespoons unsalted butter (for greasing)
  • 2 teaspoons fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with butter.
  2. In a bowl, whisk together heavy cream, minced garlic, salt, pepper, and half of the shredded cheddar cheese until well combined.
  3. Layer half of the sliced potatoes in the greased dish. Pour half the cream mixture over the potatoes and sprinkle with thyme.
  4. Repeat layering with the remaining potatoes and cream mixture.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
