  • 1 tsp paprika
  • 4 large eggs
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and red bell pepper; sauté until softened, about 5 minutes.
  2. Stir in minced garlic, cumin, and paprika; cook for an additional minute until fragrant.
  3. Add canned tomatoes (crushed by hand if whole) and bring to a simmer. Cook for about 10 minutes until sauce thickens.
  4. Create wells in the sauce using a spoon; crack an egg into each well.
  5. Cover the skillet with a lid and cook until egg whites are set but yolks remain runny, about 5-7 minutes.
  6. Garnish with chopped parsley or cilantro before serving.
